水 is primarily 'water' (the liquid you drink). It can also refer to a river (河水), a liquid or beverage (汽水), or in informal usage, additional income (外水). In some contexts it serves as a classifier for the number of times clothes are washed (洗两水). At HSK 1, you only need the basic meaning: water.
