Definition
屠杀 (túshā) means 'to massacre, to slaughter' and is used exclusively for the mass killing of people, often in war or genocide. It is never used for animals. In contrast, 宰 (zǎi) is the everyday word for slaughtering animals for food, and can also mean 'to rip off' a customer.
