开张 (kāi zhāng) means 'to open a shop/business for the first time' or 'the first sale of the day'. It focuses on the initial start or the day's first transaction, unlike 开业 (kāi yè) which is the general 'start operations' and 营业 (yíng yè) which means 'to be open for business' (ongoing). 开场 (kāi chǎng) is only for performances/events.
