Definition
炖 (dùn) means 'to stew' — cooking food slowly in a covered pot with liquid until tender. It differs from 煮 (zhǔ 'to boil'), which cooks food in rapidly boiling water (usually uncovered), and from 烧 (shāo), which more often means 'to burn' or refers to braising with soy sauce. 炖 is the method for hearty, long-cooked dishes like beef stew or soup.
