Definition
蒸发 (zhēngfā) is the general word for 'to evaporate' (liquid turning into gas). 蒸 (zhēng) can also mean 'to evaporate' but is more technical/scientific and more commonly means 'to steam (food)'. 升华 (shēnghuá) refers to sublimation (solid→gas) and has a figurative meaning of 'to sublimate' emotions.
