收割 (shōu gē) specifically means 'to harvest, to reap' — cutting and gathering mature crops like rice or wheat. It is narrower than 收获 (shōu huò), which also covers metaphorical gains, and different from 采集 (cǎi jí 'collect specimens/data') or 采摘 (cǎi zhāi 'pick fruits/flowers by hand'). Use 收割 only for large-scale crop harvesting.
